- 1¼ cups all purpose flour
- ¼ tsp salt
- ¼ cup cold butter, cubed
- ¼ cup cold lard, cubed
- 2 tbsp sour cream
- 2 tbsp ice water
- 2 apples (about 450 g)
- ¼ cup granulated sugar
- 2 tbsp all purpose flour
- 2 tsp lemon juice
- ¼ tsp cinnamon
- pinch of salt
- 1 cup quick cooking (not instant) rolled oats
- ½ cup packed brown sugar
- ⅓ cup all purpose flour
- ⅓ cup butter, melted
Instructions
- In a bowl, whisk flour with salt.
- Use a pastry blender or fork to cut in butter and lard until mixture resembles fine crumbs with a few larger pieces.
- Combine sour cream and ice water and pour in the flour mixture until ragged dough forms.
- Wrap and refrigerate for 30 minutes. Then divide the dough into 12 circles (to be accurate, weigh each dough).
- Fit 1 dough into each 12 count muffin pan to form cups and refrigerate for 30 minutes.
- Peel and core the apples. Cut the apples thinly.
- Add the sugar, flour, lemon juice, cinnamon and salt in the apples.
- Divide the mixture among the pastry cups.
- Whisk together oats, brown sugar, and flour.
- Stir butter until combined. Sprinkle over apple mixture.
- Bake at 375°F oven until the pastry and toppings are golden and the apples are tender about 35 to 40 minutes.
