Ingredients
- 1½ cups graham crackers (12 pieces)
- ¼ cup unsalted butter (melted)
- 1 package cream cheese (8 ounces) softened
- 1 tbsp all purpose flour
- 1 can condensed milk
- 1 egg
- ½ cup halayang ube (ube jam)
- 3 tsp ube extract
Instructions
- Grease the bottom of the pan.
- In a blender, combine graham crackers and butter. Blend well until its crumbly.
- Press the crumb mixture to cover the bottom of a 9 inch round spring form pan. Use the bottom of a glass to press the crumbs. Chill in the refrigerator.
- Pre heat oven at 350°F.
- In a bowl, beat cream cheese until soft.
- Add the all purpose flour.
- Blend in condensed milk until smooth.
- Add halayang ube. Whisk until incorporated.
- Add the ube extract for color and more flavor.
- Add egg.
- Pour the filling over the crust.
- Cover the pan with aluminum foil to prevent water from seeping in.
- Bake 35 to 45 minutes or until center is almost set.
- Run knife around rim of pan to loosen cake; cool completely before removing rim. Refrigerate cheesecake for 4 hours.
