Almond Jelly with Lychees

Almond Jelly with lychees is a refreshing cold dessert. It is one of the quickest afternoon snack that you can make during summer.

There are only two ingredients for this recipe. I use Almond flavor Pudding (or jelly) and Lychee in syrup, both of which you can easily buy in any Asian grocery store. You can also use other canned fruits such as pineapple or peaches.

The lychee in syrup for me is already sweet but you can also add sugar or honey if you want it sweeter.

Ingredients

  • 1 package Almond flavor pudding (Mei Wei)
  • 1 can Lychee in syrup (567 grams)

Instructions

  1. Prepare the Almond flavor by following the instructions on the package.
  2. Turn on the stove and pour 3 cups of water in a saucepan.
  3. When it starts to boil, turn off the stove. Pour the contents of the package and mix well.
  4. Pour in a mold or a shallow container and cool until set.
  5. When the jelly sets, divide it into small cubes.
  6. Place in a serving bowl.
  7. Add the can of lychees.
  8. Chill in the refrigerator before serving. Optional: Add ice

Notes

Chill gelatin for at least 4-6 hours to set
