Apple Tartlets
This recipe is similar to apple pie. It is a mini pie filled with apples and baked with tart pastry.
I am not really a fan of apple pies, until I made this recipe from Canadian Living. These apple tartlets has a very flaky and delicious crust. I used ambrosia apples which is crisp and juicy. The smell of cinnamon apples makes it really appetizing.
My family loves to eat the apple tartlets topped with ice cream or whipped cream.
Apple Tartlets

Pastry
- 1¼ cups all purpose flour
- ¼ tsp salt
- ¼ cup cold butter, cubed
- ¼ cup cold lard, cubed
- 2 tbsp sour cream
- 2 tbsp ice water
Filling
- 2 apples (about 450 g)
- ¼ cup granulated sugar
- 2 tbsp all purpose flour
- 2 tsp lemon juice
- ¼ tsp cinnamon
- pinch of salt
Topping
- 1 cup quick cooking (not instant) rolled oats
- ½ cup packed brown sugar
- ⅓ cup all purpose flour
- ⅓ cup butter, melted
Pastry

In a bowl, whisk flour with salt.

Use a pastry blender or fork to cut in butter and lard until mixture resembles fine crumbs with a few larger pieces.

Combine sour cream and ice water and pour in the flour mixture until ragged dough forms.

Wrap and refrigerate for 30 minutes. Then divide the dough into 12 circles (to be accurate, weigh each dough).

Fit 1 dough into each 12 count muffin pan to form cups and refrigerate for 30 minutes.
Filling

Peel and core the apples. Cut the apples thinly.

Add the sugar, flour, lemon juice, cinnamon and salt in the apples.

Divide the mixture among the pastry cups.
Topping

Whisk together oats, brown sugar, and flour.

Stir butter until combined. Sprinkle over apple mixture.

Bake at 375°F oven until the pastry and toppings are golden and the apples are tender about 35 to 40 minutes.
