Kababayan is the Filipino version of the muffin. I am not sure why it is called "kababayan" because this word means 'my fellow country man' in Filipino language.

Ingredients
Dough
- ½ cup unsalted butter, softened
- 1 cup sugar
- 1 cup milk
- 2 eggs
- 1½ cups all purpose cup flour
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla
Instructions
- Preheat oven to 350°F. Prepare the muffin by greasing it. Set aside.
- In a bowl, beat sugar and butter until light and fluffy.
- Gradually add the eggs. Beat well after each addition.
- Stir in the milk.
- Mix in the flour, baking powder, salt and vanilla.
- Scoop the batter in the muffin pan. Bake for 25 minutes or until golden brown.
- Transfer to a wire rack and let it cool.
