Leche Flan (Filipino version Creme Caramel)
Leche Flan is the Filipino version of French Creme Caramel. This is one of the most popular Filipino dessert that is always served in parties. "Leche" meaning milk sums up us this dessert that consists of sweetened condensed milk and evaporated milk with egg yolks topped with caramel syrup.
I use the steaming method which is the traditional way of cooking it. Alternatively, you can also use the oven.

- 3 pieces llanera (mold)
- 12 egg yolks
- 9 tbsp granulated sugar
- 1 can sweetened condensed milk (300 ml)
- 1 can evaporated milk (354 ml)
- 1 tsp vanilla extract
- 1 tsp lemon juice (optional)
Instructions
- Put 3 tablespoons on each llanera.
- Melt the sugar by placing the llanera on top of the stove. Move side to side to melt the sugar. Use tongs as the llaneras will be hot. Set aside to harden and repeat with other llaneras.
- Slightly whisk the egg yolks. Add evaporated and sweetened condensed milk.
- Add lemon juice and vanilla. Whisk.
- Pour the egg/milk mixture through a strainer to remove the solid particles. Do this twice.
- Cover with aluminum foil.
- Place the llaneras in a steamer. Steam for 35-40 minutes until it solidifies.
- Chill for 2 hours. Turn over to a plate.
Notes
After removing from oven, let it cool. Refrigerate to set.
