Potato Pan Rolls

When I saw this recipe in Reader's Digest, I was curious on how you make a bread roll with potato as one of the ingredients. I regularly baked Pan de Sal or Filipino bread roll for my family but only used regular ingredients such as yeast and flour.

The main difference is adding the mashed potato. This made the bread roll denser and heavier than my usual Pan de Sal, but it retained its delicious taste.

Potato Pan Rolls

  • 4½ cups all purpose flour
  • 3 tbsp sugar
  • 4½ tsp quick rise yeast
  • 1½ tsp salt
  • 1¼ cup water
  • 3 tbsp butter
  • ½ cup mashed potatoes
  1. In a standing mixer, add 2 cups flour, sugar, yeast and salt.

  2. In a small saucepan, heat water and butter to 120°-130°. Add to dry ingredients and beat until smooth.

  3. Stir in mashed potatoes and enough remaining flour to form a soft dough.

  4. Let it rise for an hour. Then divide the dough into 16 balls. Place it in a baking tray. Let it rise for another 30 minutes.

  5. Bake at 350°F for 15-20 minutes or until golden brown.
