Cassava Cake
Cassava cake is one of the popular Filipino dessert or "kakanin". I often see it during Christmas time in the Philippines. It is very simple to do, however, cassava is hard to find. I used frozen cassava and it tastes really great. My kids also love it when I sprinkle cheese at the top.

- 2 cups grated cassava or 1 pack frozen grated cassava 
- 2 eggs 
- ¼ cups sugar 
- 1 cup condensed milk 
- 1 cup evaporated milk 
- ½ cup coconut milk 
- ¼ cup melted butter 
- ½ cup grated cheese for topping 
- Preheat oven to 350°F. 
- In a large bowl, combine grated cassava, eggs, sugar, condensed, evaporated and coconut milk and butter. Mix well. 
- Pour in 8x8 square pan. Bake for 30 35 minutes until golden brown. 
- Sprinkle the grated cheese on top. Let it cool before slicing.
