Cassava Cake

Cassava cake is one of the popular Filipino dessert or "kakanin". I often see it during Christmas time in the Philippines. It is very simple to do, however, cassava is hard to find. I used frozen cassava and it tastes really great. My kids also love it when I sprinkle cheese at the top.

  • 2 cups grated cassava or 1 pack frozen grated cassava

  • 2 eggs

  • ¼ cups sugar

  • 1 cup condensed milk

  • 1 cup evaporated milk

  • ½ cup coconut milk

  • ¼ cup melted butter

  • ½ cup grated cheese for topping

  1. Preheat oven to 350°F.

  2. In a large bowl, combine grated cassava, eggs, sugar, condensed, evaporated and coconut milk and butter. Mix well.

  3. Pour in 8x8 square pan. Bake for 30 35 minutes until golden brown.

  4. Sprinkle the grated cheese on top. Let it cool before slicing.
