Choco Banana Marble Loaf

I always look for different ways to use overripe bananas. I also wanted to incorporate chocolate and peanut butter as ingredients so I decided to make a bread loaf.

When making cakes or loaf breads, I like the marble look. The best way to do this, is to alternate the batter and chocolate mixture and use a knife to swirl in order to get that marble design. This recipe has a big batter so you need to use two 8x4 inch loaf pans.

Choco Banana Marble Loaf

  • ¼ cup butter softened

  • 1 cup sugar

  • 2 eggs

  • 2 pcs mashed ripe bananas

  • ⅓ cup vanilla yogurt (4 oz or 113 grams)

  • 2 cups all purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ tsp ground cinnamon

  • ½ cup peanut butter

  • ½ cup dark chocolate, melted

  1. Preheat oven at 350°F. In a standing mixer, fitted with paddle attachment, beat butter and sugar until crumbly.

  2. Add eggs, one at a time, beating well after each addition.

  3. Mix in the bananas, yogurt and vanilla.

  4. Then combine the flour, baking soda, salt , cinnamon and peanut butter until moistened.

  5. In a bowl, place the melted chocolate and take 1 1/2 cup of the batter and mix well until blended.

  6. Coat the loaf pan with cooking spray.

  7. Scoop the the plain batter and chocolate batter alternately in the loaf pan. Repeat layers.

  8. Use a knife to swirl.

  9. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.Cool for 10 minutes before removing from pan to a wire rack.
