Homemade Ube Ice Cream (Purple Yam Ice Cream)
I always miss Filipino ice cream. Once in a while, our family buys ice cream such as mango, ube and mantecado at Filipino stores.
After a year of baking and cooking different desserts and snacks, I asked myself: Why buy ice cream when you can make one? This ube ice cream has only 3 ingredients: whipping cream, condensed milk and of course halayang ube.
You can choose to use a whisk but I recommend to use a hand mixer or a stand mixer instead so you can make it faster and easier.

Homemade Ube Cream (Purple Yam Ice Cream)
ice cream with ube flavor
1½ cup whipping cream
1 can condensed milk
½ cup halayang ube
2 tsp ube extract
In a standing mixer, whip in medium-high speed the heavy cream until stiff peaks form.
Add condensed milk.
Add ube halaya. Whip till combined.
Stir in ube extract to add color and flavor.
Pour in a freeze proof container for at least 6 hours or overnight.
