Homemade Ube Ice Cream (Purple Yam Ice Cream)

I always miss Filipino ice cream. Once in a while, our family buys ice cream such as mango, ube and mantecado at Filipino stores.

After a year of baking and cooking different desserts and snacks, I asked myself: Why buy ice cream when you can make one? This ube ice cream has only 3 ingredients: whipping cream, condensed milk and of course halayang ube.

You can choose to use a whisk but I recommend to use a hand mixer or a stand mixer instead so you can make it faster and easier.

Homemade Ube Cream (Purple Yam Ice Cream)

  • 1½ cup whipping cream

  • 1 can condensed milk

  • ½ cup halayang ube

  • 2 tsp ube extract

  1. In a standing mixer, whip in medium-high speed the heavy cream until stiff peaks form.

  2. Add condensed milk.

  3. Add ube halaya. Whip till combined.

  4. Stir in ube extract to add color and flavor.

  5. Pour in a freeze proof container for at least 6 hours or overnight.
