Mango Pudding is a creamy, silky cold dessert. Made with gelatin and fresh mangoes.

Ingredients

Mango Pudding
  • 2 cups fresh mangoes (2-3 mangoes)
  • 1/2 cup granulated white sugar
  • 1 cup coconut cream
  • 1cup milk
  • 1/2 cup water
  • 3 unflavored gelatin sheets

Instructions

To prepare the gelatin sheets and cut mangoes
  1. Soak the gelatin sheets in cold water until soft. (about 5-10 minutes).
  2. Cut mangoes into cubes.
  3. Divide into 2 cups for mixing and topping.
Cooking the mango pudding
  1. In a small pot, mix 1/2 cup water with sugar to dissolved.
  2. Add gelatin sheets. Add coconut cream and milk.
  3. Simmer do not boil the liquid.
  4. Pour into desired container. Then add the mangoes in the container.
  5. Chill until firm or until gelatin is firm. (around 4 hours)
  6. Once firm, top with mangoes.
