Ube Crinkles (Purple Yam Cookies)
Ube Crinkles is a cookie infused with purple yam flavor and purple color. It is soft in the inside but crunchy outside. This Filipino inspired cookie is made from purple yam, eggs, oil , flour, sugar and baking powder.
Ube or purple yam is often mistaken for taro which it is not. It is a root vegetable and has lots of good health benefits because it contains vitamins, minerals and also acts as an antioxidant.
I love this cookie. It is not the usual chocolate or peanut cookie but a vegetable one.When making this cookie, I noticed that the dough is very sticky so it is best to refrigerate for at least 2 hours. It will be easier to handle and the cookie will not spread so much when baking.
Ube Crinkles (Purple Yam Cookies)

1½ cups all purpose flour
1 tsp baking powder
¼ tsp salt
¼ cup +1 tbsp vegetable oil
½ cup sugar
1 cup ube halaya (purple yam jam)
1 egg
2-3 tsp ube extract
½ cup icing sugar (coating)
Preheat oven to 350°F.
In a bowl combine the flour, baking powder and salt.
In another bowl, mix the oil and sugar.
Add the ube jam.
Add the flour mixture and egg. Mix until well blended.
Add the ube extract.
Refrigerate for at least 2 hours.
Use an ice cream scoop or tablespoon to form the dough into balls.
Roll in icing sugar then put them on the baking sheets.

Bake until cookie cracks on top or around 15-17 minutes. Don't over bake. Center should still be soft.
