Ube Star Bread (Purple Yam Jam Star Bread)

Ube Halaya (Purple Yam Jam) is one of the most popular jams in the Philippines. When I started making it at home, my kids loved it.

It is eaten as a dessert, or can be used as spread for bread. I was looking for new ways to make bread using the Ube Halaya. I first saw this star bread on one of the covers of a magazine.

Most people use Nutella or Cinnamon Sugar as filling, but here, I used Ube. It is fun, and quite easy to make. The purple color of Ube Halaya makes it more appetizing. It is a little bit messy because of the twisting of the dough, so it is important not to put too much of the filling.

Purple Yam Bread

Ingredients

Dough
  • 2 tsp active dry yeast
  • ¼ cup sugar
  • ¾ cup warm milk
  • 3 cups all purpose flour
  • ¼ cup unsalted butter, melted
  • 1 egg
  • ½ tsp salt
  • Egg wash: 1 egg plus 1 tablespoon water
Purple Yam Jam
  • 1 cup ube halaya (purple yam jam)

Instructions

Dough
  1. Dissolve yeast in warm milk and 1 tsp sugar. Set aside until it bubbles.
  2. In a standing mixer, with dough hook attachment, mix the flour, sugar, salt, melted butter, egg and yeast mixture. Mix until the dough is smooth and elastic. It will be slightly sticky to touch.
  3. Place in a greased bowl and cover for an hour or until it doubles in size.
  4. Once it doubles in size, punch the dough and divide it into 4.
  5. Flatten the dough into a a circle around 9-10 inches.
  6. Take an 8 inch round pan to make a dent on the dough. Spread ube halaya inside the circle. Repeat 2 more times.
  7. Assemble: Stack each circle on top of each other. The last circle will have no filling.
  8. Place the 8 inch round pan on top of the stacked dough. Remove the excess dough.
  9. Take a 4 inch round cutter or glass make a dent at the center of the dough.
  10. Divide the dough into 16 strips.
  11. Using both hands, take two strips and twist dough twice in opposite direction. Press the ends together to make a point. Your star bread will have 8 points.
  12. Cover the dough with towel and let it rest for 30 minutes. Preheat oven to350°F (177°C).
  13. Brush with egg wash.
  14. Bake for about 25- 30 minutes or until golden brown on top.
