Stained Glass Cookies

Ever since I saw a stained glass cookie made in a cookie challenge on Food Network, I immediately wanted to know how to make one. I browsed through our library's cake books and saw this recipe on how to make it.

The stained glass effect is attributed to fruit flavored hard candies. I use and bake sugar cookies recipe as the base. Simple shaped cookie cutters help to get the design clearly. You will need at least 2 cookie cutters, one smaller than the other. I'm using the heart shaped ones since Valentine's day is just around the corner.

If the cookies are too sticky, refrigerate for at least 30 minutes. Then roll again.

Ingredients

Sugar Cookies
  • 1 cup unsalted butter
  • ¾ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 2½ cups all purpose flour
  • ¼ tsp salt
Stained Glass Effect
  • 1 bag fruit flavored hard candies, crushed

Instructions

Sugar Cookies
  1. In a standing mixer fitted with paddle attachment, add sugar and butter. Beat until fluffy.
  2. Add egg and vanilla. Mix until incorporated.
  3. Mix in flour and salt.
  4. When fully combined, divide the batter into 2. Wrap in plastic and refrigerate for at least 30 minutes.
  5. Meanwhile, divide the candies by color.
  6. Crushed the candies into small pieces by using a mortar and pestle or rolling pin or even a small hammer.
  7. Roll out dough in between 2 wax papers about ⅛ inch thick.
  8. Cut dough using cookie cutters.
  9. Cut the center using a smaller cutter. Refrigerate for 15 minutes.
  10. Pre heat oven to 325°F.
  11. After 15 minutes, take out the dough and fill the centers with the crushed candies.
  12. Put one baking sheet in the oven. Bake for 12-15 minutes or until the cookies are golden and the candy has melted.
  13. Let the cookies cool and the "stained glass" has set.
