Adobong Mani (Filipino Style Garlic Peanuts)
The traffic in Manila is so bad that you can literally see a lot of vendors on the streets. Generally, it is mostly food or drinks that they are selling. One of the most popular item being peddled is adobong mani or fried garlic peanuts.
This is a very easy recipe especially if you crave for the abundant garlic flavour in the peanuts. The aroma of the garlic while frying the peanuts makes you hungry for more. It is quite addictive that my daughter always mix it with her salad.

- 800 grams raw peanuts
- 1 1/2 cups vegetable oil
- 1 1/2 head garlic, finely chopped (keep the skin of the garlic)
- 1 tsp salt
- 1 tsp chili flakes (optional)
Instructions
To prepare
- Pour vegetable oil in a saucepan.
- Once it becomes hot, add the finely chopped garlic. Remove from oil once it turns golden brown. Set aside.
- Fry the peanuts. Include the skin of the garlic which adds to the aroma of the peanuts.
- Remove from oil once it turns golden brown. Place in a strainer to remove excess oil. Wipe with paper towel.
- Mix in salt. Add chili flakes to make it spicy (optional).
