Bicho Bicho with Cheese is a spinoff from my original Bicho Bicho recipe. It has the same fluffy texture and I added cheese inside to make it yummier.

Bicho Bicho with Cheese

Ingredients

Dough
  • 2¼ tsp active dry yeast
  • ¼ cup warm water
  • 1 tsp sugar
  • 4 cups all purpose flour
  • 1 tsp salt
  • 1 cup fresh warm milk
  • ½ cup butter melted
  • 1 egg
  • 16 pcs cut cheese (3 x ½ inch)
  • oil for frying
  • cheddar cheese (filling)
  • ¼ cup granulated sugar for dipping

Instructions

  1. Dissolve yeast in warm water and a tsp of sugar. Set aside for 5 minutes until it bubbles.
  2. In a standing mixer, fitted with dough hook, add 2 cups flour, salt, milk, butter, egg and the yeast mixture. Mix.
  3. Pour the rest of the flour. Blend until the dough is smooth and elastic.
  4. Place the dough in a greased bowl and let it rise for an hour.
  5. Meanwhile cut some cheese and set aside.
  6. Once the dough doubles in size, divide the dough into 16 - 18 parts.
  7. Using a rolling pin, shape the dough into a rectangle.
  8. Put the cheese and roll the dough to cover the cheese.
  9. Cover with a cloth. Let it rest for 30 minutes.
  10. Open the stove to medium- high temperature. Pour oil in a frying pan. Once the oil is hot, put the dough to fry.
  11. Flip the dough on both sides until it is golden brown.
  12. Roll the dough in the sugar so that all sides are covered.
