Brazo de Mercedes Cupcake
Brazo de Mercedes is a meringue with custard filling. It is often baked like a cake roll instead of individual pieces. Brazo de Mercedes cupcake will be easy to serve for parties and events.
It is basically eggs, sugar and milk and does not contain flour. By having it as cupcakes, everybody can conveniently enjoy its decadent but light taste.

Ingredients
Meringue
- 5 egg whites
- 1 tsp cream of tartar
- ½ cup sugar
Filling
- 5 egg yolks
- 1 can condense milk
- 1 cup milk
- 2 tbsp cornstarch
- 1 tsp vanilla
- lemon zest
Instructions
Meringue
- Preheat oven to 325°F. Prepare muffin cups in the muffin pan.
- In a standing mixer with whisk attachment, add egg whites and whisk in high speed. When bubbles starts to appear, add cream of tartar.
- When it starts to foam, add the sugar gradually until soft peaks form. It will be smooth and glossy.
- Pour the whipped egg whites in a piping bag with 1 M tip.
- Pipe the meringue in the muffin cup.
- Bake for 35-40 minutes or until golden brown.
- Leave the oven doors open and let the meringue cool inside. This is to avoid the meringue to deflate.
Filling
- Prepare a saucepan. Whisk the cornstarch in the milk. Add the egg yolks, condense milk, vanilla and lemon zest. Mix well.
- Turn on the stove to medium heat. Continuously stir for 30 to 40 minutes.
- Once the mixture thickens, turn off the stove and let the custard cool.
- Once cooled, place the custard in the piping bag with 1M tip.
- Pipe the custard in the center of the meringue.
- Serve right away.
